Gueuze, 5.5%, aged around 1 year : Slightly hazy golden color with lots of activity. Gets a bit cloudy as the yeast is poured. Light foamy white 1 finger head, lasting around 2 minutes, with not much legs but pretty strong lacing, moderate swirl reaction. Flavors of cranberries, green apples, peach, sweet grains dominant wheat, wild yeast, floral hops. Slick oily medium to full body with extra crispy carbonation. Strong sour finish of tart fruits, heavily funky and vinous, yet it ends clean on the tongue. Soft straw and floral notes with some cheese and a hint of wood. Great balance here because I don’t specially like sours yet this one I can easily enjoy as an appetizer. I don’t know if it aged well cause the sourness slightly hits the throat but it’s bearable. Gets quite sharp and interesting as more yeast is poured, producing a vegetal feel. Good complexity, passable freshness, though quite warming. Overall excellent quality craft.

Double IPA with a German touch, 7.9%: Slightly hazy dark straw color with low activity. Gets cloudy with the yeast pour. Foamy and softly frothy white 3 finger sparkling head, lasting around 15 minutes, with okay legs and a good swirl effect. Flavors of mangos, pineapples, orange, grapefruits, pepper, soft clove, banana yeast, wheat and floral hops. Thick and smooth oily full body with sharp and extra crispy carbonation. Medium to strong strength finish, quite balanced and accessible at first while getting more tropical, citrusy and piney as the yeast is poured. The fruit flavors are deeply rich and the floral dry hops bouquet impressive. Great complexity and damn delicious. Very fresh yet filling. Solid double IPA with the intensity of a single, overall this is a superb quality craft. Highly recommended, almost as good as their Signature IPA.

Cloudy and veiled golden color with moderate activity, gets murky with the yeast. Thick creamy, frothy and rocky, white 3-4 finger sparkling head, lasting around 20 minutes, with generous legs. Flavors of pineapples, passion fruits, mangos, lemon, caramel, sweet grains, wheat, floral spices. Slick and smooth medium body that gets to full with the yeast drop, a bit silky, with extra crispy carbonation. Medium to strong strength finish, sharp and clean, light pine and leaves, delicate tropical fruits and sugary caramel malts, soft clove and butter, peppercorn, sharp yeast and flowery spices. Nice intensity and very accessible. Inviting fruity feel, no harsh tongue coat. Perfect representation of a well balanced single IPA, delicate and complex while highly flavorful. With the yeast drop it gets sharper and zestier, more dry and piney. Delicious with a satisfying body. Super refreshing. Highly recommended IPA, up there with Auval. Overall exquisite quality craft.
